Hello Foodie Friends
Don't forget Mother's Day is this weekend on Sunday and a great way to make Mom feel special with a personalized breakfast in bed made by none other than...you! This is something Moms often dream about and seldom indulge in so this will be a real treat. How about a COFFEE CAKE recipe just like a bed and breakfasts would do? Try this...it's delicious and not even a lot of fuss to make (although Mom will think you went to a lot of trouble).
It really doesn't have to be an elaborate gourmet meal. Believe me, you could serve cold cereal out of those individual boxes and the gesture along would feel special. Be sure to take a minute to top it off with a handwritten card to tell Mom you love her too. When I was just a small lassie my teacher helped us learn to sing this poem and I was so proud to sing it to my Mom :)
A Poem For Mother:
M-O-T-H-E-R
"M" is for the million things she gave me,
"O" means only that she's growing old,
"T" is for the tears she shed to save me,
"H" is for her heart of purest gold;
"E" is for her eyes, with love-light shining,
"R" means right, and right she'll always be,
Put them all together, they spell "MOTHER,"
A word that means the world to me.

LOADED CINNAMON COFFEE CAKE
INGREDIENTS:
1/4 cup margarine
3/4 cup sugar
1 egg, slightly beaten
1 1/2 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Topping:
1 cup brown sugar
3 tablespoons flour
2 teaspoons cinnamon
4 tablespoons margarine
1/2 cup walnuts or pecans, finely chopped
DIRECTIONS:
Preheat oven to 350 degrees. Spray a 9" x 9" pan with nonstick cooking spray. In a medium bowl, cream margarine and sugar; beat in egg. Sift together flour, baking powder and salt in a separate bowl. Add to creamed mixture alternately with milk. Stir in vanilla. Pour blended mixture into prepared pan. To make topping: In a small bowl, mix together sugar, flour and cinnamon. Cut in margarine with pastry blender or fork. Spoon half over batter and swirl. Spoon remaining topping over batter and sprinkle with nuts. Bake at 350 degrees for 30 minutes.

SPECIALTY COFFEE RECIPES
Cafe Mocha:
Ingredients:
1 shot of espresso
1 tablespoon of cocoa powder
1 tablespoon of sugar (adjust to taste)
1/4 cup of milk
Brew a shot of espresso.
In a small saucepan, heat the milk, cocoa powder, and sugar over medium heat, stirring constantly until well mixed and hot. Pour the espresso into a mug and top with the hot chocolate mixture. Optional: Top with whipped cream and a sprinkle of cocoa powder.
Vanilla Latte:
Ingredients:
1 shot of espresso
1 tablespoon of vanilla syrup
3/4 cup of steamed milk
Brew a shot of espresso.
Steam the milk until it reaches a creamy consistency. Pour the vanilla syrup into the bottom of a mug. Add the espresso shot on top of the syrup. Pour the steamed milk over the espresso. Optional: Garnish with a sprinkle of vanilla bean powder or a drizzle of caramel syrup.
