Happy Easter...Happy Spring...Happy Happy everything!

We're topping off the week with a last minute sweets idea for either an appetizer or dessert. The kids just absolutely love this MINI-CHOCOLATE-CHIP CHEESECAKE BALL served with chocolate graham crackers too. Now, you will need to let everyone know what this is or they may think "ick..cheese and chocolate graham crackers?" Plus, the graham crackers do kind of look like pumpernickle or something but watch out...once the first person discovers it this will go bye-bye very quickly! Although it is super-easy to make you do need to do this a few hours ahead of time to allow to chill completely and let the flavors incorporate. Just so I don't have any last minute fussing, I just do this the night before and it turns our great.

RECIPE: MINI-CHOCOLATE-CHIP CHEESECAKE BALL

INGREDIENTS:
1 8-ounce package cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners sugar
2 tablespoons brown sugar
1/2 teaspoon vanilla extract
3/4 cup mini semisweet chocolate chips
3/4 cup finely chopped pecans

DIRECTIONS:
In a medium bowl, beat together cream cheese and butter until smooth. Mix in confectioners sugar, brown sugar and vanilla. Stir in chocolate chips. Cover, and chill in the refrigerator for 2 hours. Shape chilled cream cheese mixture into a ball. Wrap with plastic, and chill in the refrigerator for 1 hour or overnight. Roll the cheese ball in finely chopped pecans before serving. Serve with chocolate graham crackers.
